The Japanese word Matsu (to wait) describes the essence of a sustainable viticulture project that combines the care for nature with biodynamic techniques.
This vegan wine has a great robe and a profound color, an expression of its young age. It has an intense aroma in which one can find dark fruits such as blackberries and blueberries, mineral notes also appear, creating this fresh wine with complexity. In the mouth, again this wine dominates the fruitful sensations, perceived as a wine with body; though at the same time it leaves pleasant lickerish sensations, contributed by the maturity of the grapes from which this wine is made.

Handpicked from a selection of 50-70 year old vines of limited production in poor soil is fermented in concrete vats and temperature-controlled to avoid surpassing 24ºC (75ºF) to maintain freshness and its fruity characteristic. Malolactic fermentation takes place in French oak barrels, once completed, it is left unfiltered to preserve its natural features |
