Deep and intense aroma with blackcurrants, black plums, kirsch, and slightly sweet dish with vanilla and cedar. In the mouth, it is more tightly structured than its little brother Tìcche with good fresh acidity and less heat in the fruit. full-bodied, dry with good distinctive tannin and notes of cherries. The Rasole also has a little tobacco and dark chocolate flavor as well. Delicious now, but it has everything it takes to develop further in the basement.

Vinification

The fermentation process includes a cold pre-fermentation maceration at a controlled temperature between 4 and 6 °C (39-42°F) with skin contact, made with 30% of the grapes. The process lasts for 4 days in an aqueous and non-alcoholic solution, in order to have, on one hand, a delicate extraction of the aromas and color, while on the other hand a wine with low tannins but well structured. The alcoholic fermentation – until the sugars end – lasts for about 2 to 3 weeks and is made in stainless steel tanks at a controlled temperature between 22 and 26°C (71-78°F). Then, a 7 days post-fermentation maceration process follows in order to extract the right structure needed for fining. The malolactic fermentation is made in oak in order to give the wine smoothness and persistence.

Aging

Sangiovese alone undergoes aging of about 14 months in first and second pass French oak barrels. A refinement period of 2 months in the bottle follows.
